Beach, please! ;)

Woops, I didn’t update today (March 30) and now it’s past midnight. I got so much done today and still going… right now I am trying to complete this page: Orlando Photographer Shoot Locations which lists every unique place I have met with photography clients. I am creating a little collage for each location. This is also good since I added a simple slideshow to the top of the site – now I have new pictures for it.

I will probably be up for a while longer… it is nearly 1 AM. I have my first Hindu engagement ceremony tomorrow but that is in the late afternoon. So I can steal some moonlight for the moment. :)

Besides eating and being in love, we have mostly been on the computer getting stuff done. It was a good day for sure.

I have been addicted to Cafe del Mar compilations. It’s just… cool. Relaxing. Reminds me of being on vacation in a modern hotel at the beach.

I can’t wait to get to the beach soon.

I am so pregnant! And I love weddings!

I was writing an email to one of my May brides to ask how everything is going. When I wrote “I can’t wait for your big day!” I started to get teary eyed. I think it’s a mix of being happy for her and her soon-to-be husband and the fact that I’ve had to turn down so many weddings this summer (June, July and beyond). Ergh!

Hello Better Mood :)

Today was much, much better. I think it was because Daniel and I had breakfast together. Sure, it was Chick-fil-A in the car right before I dropped him off at work, but we were still together! I think I must need chicken in the morning to function. I felt so good today that I cleaned part of our yard that had vines growing all over it and almost three years worth of accumulated leaves. Did I mention I finally got my blood taken today? Awesome as usual there. And I went to Ulta. Swoooon. Originally it was to find Daniel some hair gel, but everything just smelled blah. I did get myself a few things and that made me feel good. Also I smelled only one bottle of perfume, because I liked the bottle. At first I wasn’t impressed but later when I got a whiff of my wrist, I thought “Wow, I want to get that ASAP.” Even though Daniel got me new perfume for Valentine’s I hardly use it because I like looking at the bottle and keeping it full. It’s a very special perfume for me. So I would like to get a new perfume that I will actually use all the time. So this is that perfume I smelled today and plan on getting soon

I ate a lot today really. Finished off a container of hummus. Then when I went to Publix this evening they had buy one get one free hummus. Score! This baby is going to be composed of a lot of hummus.

Also I’m not going to stress this finding a house thing. We have decided to really start looking sometime in May. Until then I am just going to take it easy and enjoy our pool while we have it. I have no idea if we’ll have a pool at the next house. I was also thinking, we better build our house in the future. We shouldn’t buy a house yet. So there’s my dwelling status.

17 Week Pregnancy Update

I felt better at the end of last week. Since this week started I did have that sneezing attack but I haven’t sneezed for days now. This is strange and makes me worry. Maybe my body has just figured things out. That would be a good thing. I have had to take a nap today and yesterday. So they have not been my best days. I am so tired of feeling drained. I thought my energy was coming back but now I feel like I did about a month ago. Ugh. And no matter how much water or other liquids I drink, I still feel dehydrated and get headaches. I just do not feel normal. I have not felt the baby move yet either. I thought it was supposed to happen by 20 weeks but it turns out it could be until 25 weeks. At least we might know the gender before I feel any movement. :)

Today is an off day for me and I don’t feel like writing. I think I stressed myself out looking for houses to rent earlier today. There is just nothing and I looked for over an hour. And this isn’t the first day I’ve spent so much time on it. Most of the houses listed on Craigslist are on all of the other major home sites. There’s not much variety. And we really would like to rent from a private owner and there’s just not many of those kinds of listings. Many houses do not have fenced in backyards, which we need. Many don’t even allow pets. It’s so silly because we are not dirty people and our dog isn’t going to eat their house. I am tired of being controlled.

On Monday I emailed for more information on just one property. I asked one question about it. The person replied and didn’t even address my question. Instead I got this list.

How many people is this for? Roommates?

When are you looking to move?

Do you have any pets? Sizes and breeds?

Are you currently in bankruptcy or filed one in the recent past?

Current or past Foreclosure? Short Sale? Are you behind on your mortgage
payments?

Have you ever been evicted or left owing a landlord any money?

I replied very nicely and today they still haven’t replied. No idea why. But I felt like a criminal or something as soon as I read that list.

The crazy thing is all of the other places we have rented just sort of fell into our laps. It didn’t take me long to find them and everything always fell into place very quickly. For the past few months when I look for places, nothing is right. And this time is when it counts the most for me.

The only thing that makes me feel happy is looking at houses to actually buy. But I am not sure if we can do that yet. I feel like we should probably try. We do have time left. And there are plenty of houses I feel comfortable buying in the Apopka area. I would like our own place and to not deal with being questioned and monitored. I feel so done with it. I think because I am pregnant I am already in my “nesting” mode and figuring this out is very important to me. Sometimes it’s all I can think about.

Recipe Time: Almost Lomo Saltado

One more post before I go take a bath and get ready for bed. My mother-in-law wanted my recipe for almost-lomo-saltado. And I have been meaning to sit down and figure out what I have been doing! I don’t have a better picture of it right now besides this one:

It doesn’t look that appetizing there but I promise it’s good. I’ll update sometime with a better picture. Here we go!

Lomo saltado is a Peruvian dish that has Asian influences consisting of strips of sirloin marinated in vinegar, soy sauce and spices, then stir fried with red onions, parsley and tomatoes. It is traditionally served over white rice with homemade french fries that look more like potato wedges.

From Kayla:

You’ll need…

2 large red onions, quartered and pulled apart
4 medium tomatoes, quartered
1 package stir fry style beef strips (about 1.5 lbs)
1 1/2 cups white vinegar
2/3 cup soy sauce
aji amarillo pepper sauce (optional)
olive oil
salt and pepper
white jasmine rice

1. I have never marinated the meat beforehand, but I’ll try it in the future. So far what has worked for me is seasoning the beef strips with salt and pepper and cooking in hot olive oil. Cook the beef until the juices start to surface. Do not overcook the meat. In fact, take the meat out of the pan before it is fully cooked. Put the meat on a plate and set aside.

2. In the same pan, add more olive oil and add just the red onions. Cook them until they start to become clear. The heat should be above medium.

3. Add the tomatoes to the onions and cook until tomatoes start to become soft.

4. Pour in the vinegar and soy sauce. Lower the heat to just a simmer. Add the beef. At this time add a few teaspoons of aji amarillo pepper sauce. This is optional. I have a jar of this stuff because I ordered it online. The only time I use it is when I make this dish.

5. At this point you should have a pan full of much softer onions and tomatoes and quite a bit of liquid. The beef should be submerged in the liquid so it can finish cooking and become even more soft.

6. Cover the pan and let the veggies and meat become more tender for about 30 minutes. Then serve over white jasmine rice.

If you want you can add the french fries or some other potato thing, but I’m just not into that.

Random rant: the unexpected things businesses still do in 2012. I didn’t know there was such a thing. They never said “Hello, friend” and let me know the price was going up. But at least now I know it will go up every year. That’s fun!

How was your day?

Today was a waste really because at around 11 AM I wasn’t feeling good at all. I did go grocery shopping before that happened and still made a huge dinner tonight, but I did not get to go to the post office or go for my blood test. I am doing both of those two things early in the morning. So tomorrow I’ll be updating on that and I’ll also be writing my 17 Week Pregnancy Update. I’m so, so close to my April 5th appointment. That appointment is just a check up and I’ll be able to listen to the heartbeat. I hope everything is still okay – I get so anxious since I still can’t feel the baby move just yet.

I’m guessing that the ultrasound appointment will be four weeks after April 5th, so we should know if we are having a boy or girl by the first week of May. Or hopefully the appointment will be sooner than that! The days are inching closer. :)

Recipe Time: Beet Soup

It’s a bird, it’s a plane… it’s a BEET! A big and serious beet.

I think there’s another post around here about beet soup but just forget about that one. This time I’ve got it going on.

Beet soup is also known as borscht but I’ve learned that true borscht is so different. Usually it has onions, sausage and more. (It can also be white and very far from pink.) I consider a simple pot of beet soup as just that: beet soup. I have made this probably six times so far. Behold, my final (for now) recipe for delicious beetness.

You’ll need:

6 large beets (the kind that fit in the palm of your hand) or about 9 small to medium beets
2 32 oz. containers of beef broth (hey we all can’t have stock in the freezer)
2/3 cup red wine vinegar
juice of 1/2 lemon
2 tbsp. salt
pepper to taste
dried dill to taste

This is a process of love. And it can be intimidating at first to even buy beets. Usually they come in groups of three or four, and the massive greens on top fill up the baggie you’re putting them in. It’s awkward buying such massive, fluffy vegetables. Don’t worry – you’ll get used to this.

1. Take your beets home and use kitchen scissors to cut off the tails of the beets. And cut off the greens close to the top. But it is okay to leave a little bit of the roots at the top. They cook down and become soft.

2. Put the beets in the sink and run water over them. Scrub them with a little brush to get all of the dirt off. That is very important.

I have a little brush that looks like a potato. Unfortunately it does not have eyes or shoes like this one:

3. Dunk the now very naked beets into a big pot of water and boil them until they’re soft when you poke them with a fork. You may also notice the skin peeling when you poke them.

4. When they are done, scoop them out of the water and put them in a colander. Leave the “beet water” in the pot. Take the beets to the sink and immediately run cold water over them. After water has washed over them for a few minutes they’ll be cool enough to touch. You can leave the water running as you easily rub the skin off of the beets. It should slide off very easily.

5. Get a big plastic bowl and put a sieve over it. Pour the “beet water” through the sieve and into the bowl. Then wash the pot that the beets cooked in. (There will be some foam and debris stuck to the edges of the pot. Return the pot to the stove.

6. Put about two cups of the strained, clean beet water into the pot. Discard the rest of the beet water. (Sometimes the beet water can be bitter so I never use all of it.)

7. Time to grate your beets. They should be even cooler now and you can grate them into pieces. When you get to the “nub” leave it on your cutting board and go to the next beet. When you’re done grating all the beets down, you can then take a knife to chop up the remaining beet tops.

8. Pour both containers of beef stock into the pot with the two cups of beet water. Add the juice of 1/2 lemon. (You may want to put the juice of the entire lemon if you’d like.) Add the red wine vinegar – it combats any bitterness in the liquid. (Beets can have a little attitude.) Then add the salt, pepper and dill. Let this liquid mingle for about 10 minutes before adding the beets.

9. Put all of the grated and chopped beets into the pot. Stir. You only need to cook it for about 30 minutes – it depends on how much softer you want the beets. The heat should be near boiling, but not boiling.

10. While the soup is simmering away, you can use the lemon halves to rub the pink off of your hands before you throw the lemon away.

11. Taste the soup and make sure it is good for you. You may want to add more salt, maybe even some sugar. More lemon? More dill? This is your world, make it count.

12. Serve the soup with a big dollop of sour cream. Mix the sour cream into the soup and delight in the bright pink amazingness.

My phone captured the steam oddly. There is not dirt in my soup. :) I know it looks like that! But in real life it was beautiful and had no gray in it. Haha.

OPI Love Is A Racket Nailpolish, And The Secret To Strong Nails

The best thing I have found to keep nails strong is a simple little bottle of Sally Hansen Green Tea + Olive Growth polish. Each time I change my nailpolish color I put on a coat of Green Tea + Olive as my basecoat. Then two coats of color polish and one clear topcoat. My nails never break, sometimes for weeks at a time.

Recently I went through all of my color nailpolish and only kept a few bottles. I sent about 25 polishes to my mom to see if she liked any of the colors. I’m trying to keep my collection small because honestly you never use all of this stuff. But I had to pick up this polish when I saw it… it was a bright red with pink flecks. “Love Is A Racket” by OPI.

Mini Update: The Taming of the Nose

Last night I took one little pink Benadryl allergy tablet (we read it was safe for pregnant women of course). It only helped for about 30 minutes probably and then it just made me drowsy. I fell asleep from around 8 PM until 11 PM and woke up without any sneezing but still could not breathe through my nose. Sleeping was pretty rough… I kept waking up and noticing how dry my mouth was, then would fall asleep again. But so far today I have not sneezed at all. I am pretty weirded out but so happy about it. This is the first day I have not had one sneeze in over a month. I did have a headache earlier but now that is gone too. So I am currently writing this problem free and I’m about to get some work done! Also going to finish up laundry and some cleaning. I have one photo session this week which will be on Saturday. It’s an engagement ceremony at a local Hindu temple. I’m pretty excited about capturing all of the colors. I love color.

Tomorrow I’ll be going to get the second part of my last blood test done (for a while at least). So today I need to drink a lot of water to get my tiny veins plumper. (My veins always give them trouble.) And I’ll finally be going to Publix for groceries! We have been eating at restaurants way too much. But we had fun. :)

I have semi-good news about getting out of our rental early. Our landlord replied today and said that he is checking with the owner. So there is not a definite yes or no yet. I have a feeling that the owner of this house is very nice and won’t have a problem with us leaving early. We’ve almost been here 3 years and have never asked for anything, never caused any problem, and have paid on time. Plus I know they can find another renter for this house pretty quickly. I’m pretty sure this house was only vacant for about a month and then we scooped it up. So fingers crossed for a much earlier exit than September. If we could find another house and leave sometime in August it would be good enough. But I’m wishing for even earlier… I am so excited to move into a newer, bigger house. We have come to terms with the fact that we won’t find a better backyard and pool than what we have now, but as long as we have a fenced in backyard and the house is freshy fresh, I will be ecstatic. The vintage look is not out of my heart, but I want it out of my house. :x We plan to rent the next house for about two years, and then buy a house. We will both be thirty years old. Eeek!

That’s all for now. On Wednesday I’ll be 17 weeks. I can’t believe how close I am to 20 weeks which means I’m half-way through my pregnancy. Eeek!

Update: We have been approved to vacate with 30 days notice. Let the house hunting begin. :)
