What do you do when you’re craving rice and beans, but only have one can of black beans? You add butterbeans instead and get a southern twist on classic rice and beans. And it’s easy and quick with instant rice. Here’s how.
You’ll need:
2 small yellow onions
2 cloves of garlic
1 can of black beans
1 can of large butterbeans
1 small can of Goya tomato sauce
1 chicken boullion cube
2 bags of instant white rice

cumin
Finely chop two small yellow onions and two cloves of garlic. Sautee them in olive oil until translucent over medium heat. Then sprinkle with good amounts of both oregano and cumin to your taste. You can also add other spices that you like such as cayenne pepper.
Empty the two bags of instant rice into the onion mixture and slightly toast the rice in the oil. Make sure the rice is soaked in the flavorful oil, and add in both cans of beans (including liquid). Mix thoroughly while bringing it to a boil.
Add in the can of tomato sauce. Dissolve the chicken boullion cube in a cup and a half of hot water. Add to the mixture. Bring to a boil again and make sure the rice has cooked. The rice should soak up all of the liquid. Once that has happened, you can also let the rice become toasted on the bottom and mix all together again before turning off the heat.
