Today, the first day of September, I have officially left a company that I was with since 2003. Now I look forward to focusing on my photography business and doing what is best in my life.
You know, Miss Ruth was a lady. And a lady always knows when to leave. – Sipsey, Fried Green Tomatoes
This all brings me to soup. A good soup is like a good life. And what a beautiful thing soup is; you can make it out of anything whether they are mistakes or triumphs. Today I had a reason to try.
The ribs from last night (a triumph) were really good and cooked up an amazing broth. This is a picture of Daniel putting some of that yummy juice over his food.
So today I had leftover ribs and leftover peas. I decided to take all of the meat off of the bones and plop it into the Crock Pot. There were little bits of meat and goodness in all of the juice. Also put the rest of the peas in. To that I added a large can of crushed tomatoes to create more of a base.
Then I fried half an onion, a chopped kielbasa, and minced garlic in butter.
And it all goes in!
Next I chopped three big potatoes and fried them just a little in more butter, and more minced garlic.
You’re thinking there’s a lot of butter and garlic here (and frying). I think these are key reasons a soup like this becomes a success. This isn’t soupe à l’oignon.
The soup was already red but I am in a fall mood, so it needed more color. Carrots went in too.
At this point, we had a full house. I topped the pot off with some water and now it’s simmering away. Hopefully it thickens up by the end of the day, if not I will figure something out. I also figured I would call this Rustic Root Soup because I like to name everything.
In other news, I went to HomeGoods this morning which is one of my favorite places to be. It’s Halloween time again in there and I was in lurv. I got an orange votive holder, photo albums for me and D, and two gifts for my parents. I can’t say what they are since they may read this before I send the package. But it was a nice little trip as usual.
I just realized the candle holder is the exact same color as the soup. That’s just my color right now I guess.
